Three Heritage Dishes That Tell the Story of Negrense Cuisine

Manami Resort is known for its thoughtful approach to luxury, one that celebrates nature, culture, and a deep connection to the island. At the heart of the resort’s culinary experience is Lingaw Restaurant, a destination where Negrense heritage cuisine is reimagined with contemporary finesse. Named after the Hiligaynon word for “to entertain,” Lingaw invites guests to discover the rich flavors of Negros Occidental through dishes that honor tradition while embracing modern creativity.

Negrense cuisine emerges as both everyday comfort and refined regional expression, best reflected in three heritage dishes often highlighted in Manami’s offerings: Kinilaw de Negros, Kansi, and Fried Chicken Inasal.

Kinilaw de Negros (Filipino Ceviche)

 

Fresh-caught tanigue (Spanish mackerel) takes center stage in Lingaw’s Kinilaw de Negros, where the fish is cured in local coconut vinegar and enriched with a touch of coconut milk. Tossed with onions, cucumber, tomatoes, and salted egg, the dish offers a bright and distinctly Negrense interpretation of the Filipino classic. Light, clean, and vibrant, it captures the essence of Sipalay’s coastal abundance in every bite.

Kansi: The Comfort Broth of Negros

 

Often described as the lovechild of sinigang and bulalo, Kansi is one of Negros Occidental’s most beloved comfort dishes. Tender beef shanks and bone marrow are slow-simmered with green jackfruit, chili peppers, and batwan: the indigenous fruit that gives the broth its signature tartness. The result is a deeply flavorful soup that balances the richness of bulalo with the bright acidity of sinigang. At Lingaw Restaurant, Kansi is a heartfelt tribute to Negrense home cooking, capturing the warmth and soulful character that have made this dish a regional favorite for generations.

Fried Chicken Inasal: A Familiar Classic, Reimagined

 

Inspired by Bacolod’s iconic chicken inasal, Lingaw Restaurant offers a distinctive interpretation by frying rather than grilling the marinated chicken. Infused with garlic, lemongrass, calamansi, vinegar, and atsuete, the chicken is fried until golden and crisp, creating a flavorful contrast between its crunchy exterior and juicy, tender meat. Served with pickled cucumber and a bright ginger sauce, the dish preserves the smoky, tangy character of traditional inasal while offering a fresh and unexpected take on one of the Philippines’ most beloved comfort foods.

Together, these dishes form a portrait of Negros Occidental’s culinary identity, where sea, land, and tradition converge.
