Complementing this focus on talent is the “Ilonggo Heritage Series” at the signature Ani Restaurant. This curated program transforms dining into a storytelling experience. The menu draws creative inspiration from the stories that have shaped the region’s identity, bridging the gap between the spirit of intimate family kitchens and the global stage.

Guests can savor the Adobado nga Lukon, which pays homage to the seafaring heritage of the Varona family, or experience the Bibingka, inspired by the festive warmth synonymous with the Gorriceta-Jalandoni family. The series also features Pancit Molo, a dish that honors the soul-warming, iconic tradition of Kap Ising.

Building on the success of this series, Ani Restaurant will soon introduce themed dining packages designed for guests to forge a deeper connection to the province’s defining flavors. These upcoming offerings represent the hotel’s commitment to being more than just a place of rest—it is a space where Iloilo’s storied past meets its vibrant future.
